For years I’ve had an intolerance to fructose and sugar has a negative impact on my system too – but I LOVE cake, not a lot, just a little sweet-something each day and seeing as I must avoid bananas, peaches, melon and all the fructose-rich summer fruits that are available right now, something has to be done!
So – I’ve created my own sugar free (Agave syrup as a supplement) and fructose-free (if chosen) chocolate brownies. Because I can eat the occasional berries (they’re not too fructose-rich) I added two strawberries to these little treasures, and if I say so myself, they are quite delicious – the perfect complement to a strong pot of tea:)
Method for around eight small brownies:
Preheat oven to 180.
Melt a tablespoon of Groovy Food organic coconut oil with a tablespoon of Whole Earth three nut butter in a pan, and add some grated raw cacao (Willies). Stir till melted and sweeten with a tablespoon of Groovy Food Agave Nectar.
In a separate bowl, grate half a courgette (yes, you read it correctly!), and add any other ingredients you fancy such as goji berries, mashed/crushed up strawberries, any other berries.
Add some crushed nuts such as Pecan, Almonds or Walnuts, or some Omega Three nuts and seeds.
Break in one organic egg.
Add a pinch of cinnamon.
Mix all of these with the heated chocolate sauce and place it in a baking tray in middle of oven for around 15 mins.
Place in fridge when cool, and allow to set.
